Title
Scrambled Eggs a la Diana
Preparation time

Ingredients
3-4 eggs
6 slices of bacon
1/4 c finely chopped bell pepper (red, green, yellow, etc.)
1/4 c finely chopped onion
1/4 c shredded or chopped cheese (feta, cheddar, mozzarella, etc.)
salt
pepper
splash of water or milk
Method
Fry bacon in large skillet until crispy.
Remove bacon and place on paper towels.
Drain some of the bacon grease from the pan (optional).
In the meantime, beat eggs until fluffy.
Add a little bit of water or milk. Water makes them fluffier.
Add salt, pepper, bell peppers, onions and cheese.
Mix well.
Pour egg mixture into skillet. Using a spatula or flat wooden spoon, push eggs toward the center and tilt the skillet to allow the runny parts to distribute.
Break apart large pieces as they form.
Continue cooking until the eggs are done and the cheese is melted.
Serve hot with two pieces of bread/toast and bacon on the side.
